Chicken Pot Pie
Eric had class until 9pm on Valentine’s day, so we didn’t plan anything special, or little did the other know 🙂 When I got home from my internship on Monday, these gorgeous tulips and a sweet little note was left for me on our counter.
I met him for a study date at Starbucks between classes. After coffee, I ran to Publix to grab a few items and then began cooking a special dinner. I made a simple yet wholesome chicken pot pie. Eric has been begging for angel food cake, so for dessert I did an angel food cake topped with fresh berries and whipped topping.

Heat vegetables and cream soup in sauce pan until veggies tender. Add spices to taste. Pour mixture in baking dish. Place thawed puff pastry on top of mixture and curl excess pastry to form crust around pie. Make a design out of some of the extra pastry. I formed a heart shape on top of our pie. Brush egg wash (egg and splash of water) on top of pastry just before baking to create a nice browning effect. Preheat oven to 400 degrees F, and bake until pastry is crispy and puffs up.

Ingredients
- Corn
- Green beans
- Peas and carrots (equal parts, frozen)
- 2 cans cream of mushroom or chicken soup (low sodium)
- Grilled chicken, chopped into bite sized pieces
- Salt and pepper
- Cumin
- Red pepper
- Bay leaves
- Puff pastry, 1 sheet
- Egg
Instructions
- Preheat oven to 400 degrees F
