I’m super pumped for the weekend, and it’s staring a day early because I’m heading up to Vermont to attend Blog Brûlée with an intimate group of brilliant bloggie faves, {we’ve been seeing a lot of each other lately}. I agree Kylie… it’s going to be like the best sleepover of all time!
Blogging has become more than I could have imagined it could be.
It’s crazy to me that this blog has given me a platform to meet such dear friends from across the country. Friends that get me and challenge me and inspire me. I know I’m going to come back from the trip on fire and with a long list of blogging to-dos! Love it!!
Oh and guess what? It’s going to be boot weather!! The lows are in the 40s and highs in the 60s. Yikes!! I’m so looking forward to the crisp fall air and a chilly run! YAY!! Can you tell I’m excited?

Now on to the recipe! I know you’ve been patiently waiting for this Cobb Salad that I promised you weeks ago… the thing is I’ve made this recipe like 5 times, but we ate it all before I could take a picture of it. I know, I know #bloggerproblems
It’s another mason jar dressing!!! Just toss all ingredients into the mason jar, close the lid and shake it up! Can’t be easier.
This is one of those, OMG this is the best salad I’ve ever eaten kind of salads. My recipe tester would agree, and you can just blame him for eating the salads for my photoshoot. Do any of you food bloggers have this same issue? He sure does make a good hand model doesn’t he though?
It’s not your typical Cobb Salad because the dressing is made with Greek yogurt so it lightens it up a bit. I’ve made this salad for dinner guests too and it’s received rave reviews.

Description
This lightened up Cobb Salad with Zesty Greek Yogurt Dressing makes a comforting dinner meal. Ready in minutes and dressing made in a mason jar!
Ingredients
- FOR DRESSING
- 2 tablespoons apple cider vinegar
- 2 teaspoons dijon mustard
- 1/4 cup + 2 tablespoons nonfat plain Greek yogurt
- 1 tablespoon mayo
- 1/4 cup extra virgin olive oil
- 1 teaspoon honey
- salt and freshly ground pepper to taste
- FOR SALAD
- 4 cups butter lettuce
- 4 cups romaine lettuce
- 1 small green bell pepper, diced
- 1 small red onion, diced
- 1 cup diced tomatoes
- 1/2 cup shredded cheddar cheese
- 1 avocado, diced
- 12 ounces deli turkey breast, sliced
- 4 slices center cut bacon
Instructions
- In mason jar, combine all ingredients for the dressing. Secure with lid and shake until combined.
- Layer salad individually in four separate bowls. Top each with equal, 1/4 serving of each ingredient.
- Serve with zesty yogurt dressing!

What’s the point of starting with nonfat yogurt, then adding the fat back in with mayo and olive oil?

You could easily leave out the mayo, but I wouldn’t toss to oil.. I’ve upped the greek yogurt by a tablespoon and left out the mayo but I liked the flavor that mayo added better. If you used a full fat greek yogurt it probably wouldn’t sacrifice flavor. Without the fat, the dressing doesn’t adhere to the lettuce as well, and it would be sorta watery.

Just made the dressing for the yummy salad tonight! I taste tested it and it is very yummy! However, mine is more of a yellowish color? I double checked all of my measurements… Just wondering if you have come across this?! Thanks!

Hey Keri! I wonder if we just used a different type of mustard? I used a course ground dijon for this recipe but have honestly made it with both types… Glad you liked it 🙂

So jealous, have so much fun in VT! Love the idea of using Greek yogurt, I don’t do mayo though, could it be left out or subbed with more yogurt???

Yeah– i’ve tried it both ways and didn’t hear any complaints from the taste tester. I could tell the difference though and preferred it with the mayo because it helps to stick to the leaves better– I’m sure a higher fat greek yogurt would work too.
