This recipe is WAY overdue.. I’ve been wanting to share it with you for a while now, but it’s one of those that I make them in a hurry and quickly store them away for lunches and before I get a chance to take some pics in the perfect lighting, they’re gone! #foodbloggerproblems
Meatballs are one of my favorite meal prep foods. I can make a big batch, freeze some for later, and enjoy them in different ways… from pasta to sandwiches. Typically we serve these Spinach & Turkey Meatballs with rice and veg. Keepin’ it simple yo.
This recipe is tried and true… we’ve made them over and over again and I share them with clients often! Glad I finally have some pics to go along with the recipe 🙂

Description
These Spinach & Turkey Meatballs are a meal prepping dream. Prep ’em, freeze ’em, bake ’em. Great source of lean protein and a healthy dose of spinach!
Ingredients
- 1 pound ground turkey breast
- 1/4 cup chopped red onion
- 1/4 cup shredded parmesan cheese
- 1/4 cup italian bread crumbs
- 1 egg
- 1 tablespoon freshly minced garlic
- pinch of salt and pepper
- 1 cup spinach, chopped
Instructions
- Preheat oven to 425 degrees; line baking sheet with parchment paper.
- Place all ingredients in a large bowl mix until incorporated.
- Roll meatballs into uniform balls, about the size of a golf ball and place on baking sheet.
- Bake meatballs for 20 minutes or until no longer pink in middle and cooked through.
- Serve meatballs over rice with veggies, lettuce greens with side of fruit, in pasta with pesto or marinara sauce, in a hoagie roll with BBQ sauce and cheese.

Yum Yum Yum! I go through phases where I’ll make meatballs and have a freezer stash and then go months without doing it. Time to change that with trying out your recipe 🙂
