It seems like fall is in the air everywhere but here. I've already caught a cold and runny nose, but it's still blazing heat outside. Looks like somebody's got a case of the Mondays…I know Florida takes a little while to cool off but would it hurry up already? Fall is my absolute favorite season. As I was eating dinner last night, I realized I've eaten a Mexican-style salad my last three meals aside from the pancakes I had for breakfast. Mexican food is just so good and comforting. And it's really simple after a long day, especially on a weeknight. From the recipes on this blog you know I love to cook, bake, and eat healthy most of the time. Since it's National Running Day, I want celebrate by sharing the details about my next run race with you! Beach to Beacon 10K in Cape Elizabeth, Maine. Yes! I'm going to Maine! It's only a DREAM vacation for us… so Eric is going too! We actually wanted to go here for our honeymoon! But ended up saving money and staying in Florida. Why I had to change my diet
I mentioned on Friday that I've recently had to change up my diet. For the past 4 years, I've struggled with tummy troubles which made me feel really nauseous, especially at night. A few times I've found myself doubled over in pain and thought Eric was going to have to take me to the hospital. I was never able to pinpoint a particular food that was making me sick. I thought I had issues with dairy, but I now see that it's what I was eating with the dairy that was making me sick… I had food sensitivity testing done which showed that I was reactive to lots of foods that I would eat often. Most notably canola oil, gluten grains, and yeast. In fact it's quite possible that I ate these three foods multiple times a day.The results showed that I'm reactive to other foods, but the one's ... DIY Pumpkin Spice Latte
Sorry Starbucks, but your pumpkin spice latte is too sweet for this girl.I'm a sucker for pumpkin and spicy this time of year. {Remember this spiced pumpkin dip?} But I can't deal with going to Starbucks and paying $4.75 for a latte, especially when I only ask for a half pump of the syrup!Today is just the day to enjoy a latte of this caliber. Classic Banana Oatmeal
On Saturday mornings growing up, mom would make a mound of pancakes for all of us. Her classic recipe always included smashed bananas in the batter, we came to know this as "plain" pancakes. She would ask "do you kids want plain or blueberry?" It may be a southern thing, but were raised on banana pancakes. I've had people ask me lately about ideas on how to get more veggies at breakfast. I love making an omelet and stuffing it with spinach, peppers, mushrooms, and cheese. But if you know me, I am always looking for ways to get creative in the kitchen to keep it interesting.Soooo.. Today I went with a breakfast salad. AND WHOAH was good! Spiced Pumpkin Dip
If you haven't noticed, I'm a little pumpkin-licious this time of year. Did you hear about the pumpkin shortage? Maybe they should check my pantry! HA. No but really, if you see a pumpkin you better grab it... there might not be any left. Pumpkin is worth way more than the traditional pumpkin loaf or pie, although delicious--let's spice it up a bit. Have you tried pumpkin soup, stirred in oatmeal, or simply roasted in the oven? It's loaded with skin and eye loving beta-carotene and to me it's the taste of fall.So I put pumpkin to the test and turned it into a dip. Morning started off with a trip to the farmer's market. This is the bounty we brought back. Yes.. look at all those beautiful MUMS!!---one of my favorite things about fall!!
