Peanut Butter Pumpkin Pancakes, need I say more? Get in my belly already! Super easy recipe made with box pancake mix to simplify your mornings.
You guys. This is it. Peanut butter and pumpkin spice inside a fluffy pancake. With a thick smear of peanut butter and pure maple syrup on top. This is dreamland… but pinch yourself because a stack of these Peanut Butter Pumpkin Pancakes can be your reality. And it needs to be your reality STAT.
Check it. I made these pancakes with a box pancake mix. Yea, I’m not too foodie for box pancake mixes. I grew up on that stuff…and let’s be real, it just makes life easier in the morning. No, it doesn’t take much more effort to make 100% homemade pancakes by mixing flours and baking soda and salt, but these pancakes are like WAYYYY easier… just what you probably need in your life.
And me too if I’m being honest. Box pancake mix is the difference between eating pancakes at home and going out for breakfast. Saves my life and money. However, I am too foodie for just plain box pancake mix pancakes. Remember, plain pancakes growing up was banana. If we wanted blueberry pancakes it would be blueberry banana and plain was banana. I guess doctoring up (as my mama called it) the basics is just how I was raised.
Soooooo this is where that extra dollop of pumpkin puree comes in….and all natural crunchy peanut butter.
You all know my obsession as of late with AB (almond butter), but I tell you that this O Organics No Stir Crunchy Peanut Butter is like whoa. It’s made me fall back in love with peanut butter. It’s so creamy (and crunchy) and just downright good.
O Organics, available exclusively at Safeway stores in Florida, features over 30o grocery items from fresh fruits and veggies, to wholesome dairy and meats, cereals snacks and more. Hope you enjoy a stack of these Peanut Butter Pumpkin Pancakes soon!
