It’s {almost} Valentine’s day and with that in mind, I made this pink smoothie! I don’t know about you but I’m really excited that this day falls on a weekend. How fun! I’m totally begging Eric to take me to the beach this weekend. I’m just kinda wanting to go to one of our favorite spots Amelia Island for a little get-a-way, but I don’t know what he might have up his sleeve.

Back to the recipe! This Pink Cashew Cream Smoothie was invented when I was craving a smoothie but I wanted a protein boost without the traditional peanut butter or protein powder. I just wanted something whole and raw, and boy am I sooo happy that I added these little cashews to my smoothie!! It makes it so creamy and fluffy. I’m hooked.

- Prep Time: 5 mins
- Total Time: 5 mins
- Yield: 2 servings 1x
Ingredients
- 1/4 cup raw whole cashews
- 1/4 cup kefir
- 1/4 cup orange juice
- 1 cup unsweetened vanilla almond milk
- 1 cup frozen whole tart cherries
- 1/4 cup frozen mango
- 1/4 cup frozen pineapple
- 1/8 teaspoon cinnamon
- 1 teaspoon each, flaxseeds, chia seeds, unsweetened coconut for topping
Instructions
- Place all ingredients in a high powered blender, adding ingredients in the order that they are listed. Start slow, and blend the ingredients for about 30 seconds before increasing the speed to medium and finally to high mixing it around until the smoothie is light and fluffy.
- Pour smoothie into two cups or bowls and top with flax, chia and coconut.
- Enjoy with a big straw or spoon.

This is adorable! I always put frozen tart cherries in my smoothies after a workout. I heard they help with muscle soreness but I honestly can’t remember if there’s actual evidence backing that— not that I care because they make everything taste delicious. Never thought to throw cashews in there!

Now this looks delicious. Cashews are the base I utilize for my non-dairy cheese sauces and dips! I never thought of putting them in a smoothie though. Brilliant! 🙂
I have put hemp seeds in my smoothie for variety – also very creamy and delicious (not hemp powder though -icky)!
I also use a blend of cashews, hemp seeds, and coconut milk to make dairy-free ice cream too. So many delicious options. Can’t wait to try this one.
