Delicious! I added some extra vegetables but I’m sure it would have been very good without them, too.

This looks like such a lovely, healthy lunch! I’d be tempted to add some chopped pineapple for the full tropical experience ๐
Sounds delicious! And I have everything needed to make it. It’s going on the list!
The mouth is watering already! Love that brightness and sweetness the pineapple gives this. Delish!

This looks so fresh and delicious! And what a great way to work pineapple into a recipe, I’m always looking for ways to work pineapple into recipes because it is my fav!
I eat quinoa on the regular and love bowls like this for weekday dinners – so healthy and fresh and you actually feel good about eating it ๐ This one looks so good!
I love quinoa in simple salads like this and I”m always looking for delicious flavor combos! Pineapple also happens to be one of my favorites. I think I might add some diced ham to this one (my husband loves ham).

I absolutely love this dish! I have been on a bowl kick lately for my meal preps as well. I need to add this to my rotation!

This sounds super fresh and delicious. I will definitely try this amazing Hawaiian Quinoa Bowl.
YUM!!!! Love all the fresh flavors in this. Such a great thing to keep in the fridge too, as you mentioned! The mango is a perfect addition.

Hi Heather, I agree hospital food can be far less than appetizing…leftovers are a great way to keep lunches fresh!
Beautiful colors! And I love the addition of the mango…now if only I could master the art of cutting a mango without pulverizing it! Haha!
I ALWAYS “brown bag” it during the week! I work in a hospital and to say the food is bad is a HUGE understatement! Fried…overcooked…underseasoned…oh just about everything you’d NOT want to do when your cooking is how they prepare meals! :-/ I’m a huge fan of salads and transforming leftovers to beat the boredom…I agree 100%…you can only take so many PB&J’s…no matter how delicious a combo it is! ๐
