We have created a cherry-licous menu for you that I think would make a romantic dinner to serve on Valentine’s Day, the day of love. Because you know, tart cherries = love.

We typically don’t go out on Valentine’s Day because keeping it indoors is more our style… who wants to hustle for reservations and fight the crowds?
One of my fondest Valentine’s Day memories was back in college (circa 2009) and Eric and I made a lovely dinner, and I made a dessert that Eric continues to rave about –> “Cherry Berries on a Cloud”. I told ya, tart cherries are the way to the heart.
As we were planning the details for this virtual progressive dinner I’ve been dreaming about how fun it would be to do a real progressive dinner. To have a progressive dinner party, get 3 to 4 of your favorite couples together and travel to each other’s houses to enjoy the different courses. How much fun does that sound?!
For our virtual progressive dinner, I was in charge of the entrée—Rosemary Roasted Cornish Hens with Pears and Tart. The skins are browned and crispy and the meat is juicy and tender with a yummy sweetness thanks to the tart cherries and pears. When you roast Cornish hens it says something special and they are just so darn cute too! One hen for you and one for your love, making this the perfect Valentine’s Day main course!

These Rosemary Roasted Cornish Hens with Pears and Tart Cherries are infused with Tart Cherry Juice to give this savory main course a subtle sweet flavor that is sure to satisfy. This Cornish hen duo would make a beautiful entrée for Valentine’s Day.
Ingredients
- 2 Cornish hens (about 1 pound each)
- ¼ cup apple cider vinegar
- ½ cup tart cherry juice
- 1 scallion, diced
- salt and pepper
- 1 tablespoon unsalted butter, softened
- 4 sprigs rosemary
- 1 pear, cored and diced
- ¼ cup dried Montmorency tart cherries
Instructions
- Preheat oven to 350 degrees F.
- Marinate Cornish hens in apple cider vinegar, tart cherry juice, and scallions, salt and pepper for 2-4 hours, or overnight.
- In large baking dish, arrange hens and massage each with butter and season with salt and pepper.
- Place rosemary in the cavity of each hen.
- Arrange pears and tart cherries around hens and drizzle with marinade.
- Bake in oven for 60 minutes or until juices run clear. Allow to rest for 10-15 minutes before serving.
