Harvest Salad with Creamy Pumpkin Balsamic Vinaigrette
Home sweet home. It was a wonderful week in Lodi, California for the Almond Orchard experience. Thanks to California Almond Board I was reunited with many of my favorite RD bloggers and had the chance to meet new friends too. I’ll be sure to share more about what we learned there and the fun we had next week. For now, here is a picture of us at the orchard. I’m sure glad to be home with my babe and Pearl. I have a lot of catching up to do at work today but after that we have a fun Labor Day weekend in store.. very low key like we like it= CrossFit + Farmer’s Market + College Football Saturday. A little grilling and gardening too, and I plan to get our garden area ready for fall planting. Okay, so I’ve been really excited to share this salad recipe with you because #ohmygracious, it’s ... 10 Tips for a Healthy Tailgate + RECIPES
Who's ready for some football?? I know someone in our house is beyond pumped for the first college football game of the year, and it's not the cat. My husband has been looking forward to the start of football season all year long. Can you relate? I love Auburn football, and I support my UCF team and after that, I'm done. He's picking me up from the airport tonight so he will be missing the first part of the game #truelove. I have ulterior motives for loving the start of football season--> FALL! When it's a game weekend aka every weekend from here on out, we make a festive dish and I go out and do my thing such as shopping, decorating our house, or gardening. I can hardly wait for Labor Day weekend to begin because I plan to do just that! For those of you that will be going to a ... View Post
What I Ate Wednesday {RD Edition}
My RD/food blogger buddy, Carlene from Healthfully Ever After (whom I only wish I had half of her fashion sense and design skills), tagged me to participate in this "What I Ate Wednesday RD Edition". For some reason, what the dietitian is eating is of interest to my clients. I had an athlete ask me today...do you eat clean?? I'm like ummmm...as I think back at the cookie I munched on the day before. I explained I live by the 80/20 rule. I like to eat well most of the time, but I so leave room for little sweets. So here's a recap of my Monday eats. {all pics taken with iPhone} The day started out with a super early morning, 4:30 am wake up call. We didn't do CrossFit but I was pretty pumped about the day. First things first, coffee with a little half and half (not pictured, ... View Post
Spinach & Ricotta Quiche Muffins
What’s for breakfast? While cereal and milk is a common breakfast staple. It’s not the best choice in my opinion. For lasting energy, your body needs more than sugar. In fact if you are trying to maintain lean muscle tissue (and who isn’t?), you need high quality proteins. Protein is so often overlooked at breakfast, and over-consumed at dinner. Spacing your protein intake out throughout the day is the best bet for sustained energy, maintaining a healthy weight, and feeling your best. For breakfast, balance fiber-rich carbohydrates (fruit or whole grains), high quality protein, and healthy fats. I know breakfast needs to be simple and fast, so I’ve put together my favorite weekday breakfast combos for you. EggsSpinach & Ricotta Quiche Muffins + ClementinesHard Boiled ... View Post
Skinny Pina Colada
This weekend has been calm. We have been so busy at work lately that rest and rejuvenation is what we were craving. Nothing that we had to do, except be together which was much needed after spending our 3 year anniversary in separate cities. Memorial Day morning will be spent on the lake canoeing in Winter Park and then to off to my parents house for "southern cooking" as my dad describes it. It's going to be a HOT day here tomorrow and when the temp rises in the summer we LOVE a good pina colada. But after drinking one I'm often on a sugar high and feel a little icky. So I created a Skinny Pina Colada full of flavor that you can feel good about sipping! I hope you have a lovely Memorial Day. And if you need a few things to cook tomorrow, check out some of my festive ... View Post
