Lemon Arugula Pasta Salad. This is what it looks like to live your best springy pasta life. My best friend since forever (3rd grade… how is it possible to have a friend for over 20 years already?) makes the most refreshing spring time pasta that we enjoy at every shower and potluck. Those flavors in her salad inspired my Lemon Arugula Pasta Salad... because this classic recipe can be made in advance and is perfect for any family gathering or girly party this spring. Right after we moved into our new house, we met one of our neighbors at the park with her two kiddos. It was only a few days after we had Brooks and she knew what it was like to be a new mom of two so she brought over some delicous homemade “superhero” muffins. She’s one of those people that you feel like you’ve known ... View Post

My Barilla Pasta Tour Experience
This post is sponsored by Barilla. This month has been insane with travel! So I think we are overdue for a little life lately recap. As you may have seen on Instagram, I went up to Chicago for a quick nutrition trip with Barilla. They invited dietitians with a range of specialties up to tour their headquarters and get a taste of urban farming. Naturally, we enjoyed a pasta meal or two or three. #pastaperks This was only the second time I left little Parker overnight so it was an adventure at home too, but he did very well! Aside from protesting all forms of milk (except kefir), Eric said he slept through the night… well that or he just didn’t hear him at 3am when he usually wakes up. Dads will be dads, right? So the first afternoon up there we got our hands ... View Post

Chicken Pasta Salad with Herbed Buttermilk Dressing
I hope you enjoyed the first weekend of summer. We sure did with a trip to the beach, but more on that in my next post. Since summer is the season of picnics, backyard BBQs, and fun in the sun, I couldn't wait to share with you my latest picnic-inspired recipe. Most summer spreads include a pasta salad, and all too often heavy and laden with fat. I reinvented the traditional and lightened it up a bit by adding lots of veggies, grilled chicken, and a zesty buttermilk dressing. With the contrast of the dried tart cherries, savory chicken, and herb-alicious dressing, you're in for a treat! This pasta makes a yummy lunchbox meal too. I made a big batch of this yesterday and packed it in airtight containers for us to eat this week. What is your favorite summer side?Chicken Pasta Salad ... View Post
Shrimp Pasta with Lemon Avocado Sauce
Hello blog. It's been a little while since I have written. We have been enjoying a bunch of yummy meals over here, and I have lots of pictures to add... Hopefully they will come soon...We've had graduations (Eric and bro) and a new nephew so we've been up to a good deal of family time. This weekend Eric and I are headed to St. Augustine. The mini-vacay is mostly to get out of town one last time before the big... Bar study begins. It's actually almost our two year anniversary (May 22nd), so we can add that to the mix for the weekend festivities. There will be limited time together after the Bar prep starts, as I've been warned. Eric will be taking his Kaplan class Monday thru Saturday 9am-1pm. They stress that he will be on a "training program" and have them scheduled to study 7 days a week ... View Post
Mediterranean Pasta Salad
Yesterday, I took a day off. Well, my work schedule has been adjusted to include a day off ;). I am so thrilled with the space that this day brings.Lately, I have been feeling quite overwhelmed with working a 40-hour week at my day job. I love what I do, but I also enjoy keeping my hands in other things too. Eric and I have been talking and praying about me cutting back one day, so that I can do things like blogging, reading, house-keeping, crafting (hopefully one day I will find space for you again). I miss the little things. If you didn't know, I work for a grant funded program. This year the grant did not have the funds in the budget for two dietitians to work full-time, so we are now working 4 days a week. I felt so blessed, and relieved, when I heard this news. God placed it in my ... View Post
