Who's ready for some football?? I know someone in our house is beyond pumped for the first college football game of the year, and it's not the cat. Stuffed Chicken Parmesan
So, I'm a little nervous about running 20 miles tomorrow morning. The Vermont City Marathon with CabotFit Team is only 23 days away so it adds little pressure! I took it easy in CrossFit this morning in an effort to not have a repeat of last weekend... for extra credit today we could do GHD sit ups, in which I would usually participate but I had to draw the line and set boundaries. Eric took the extra credit so let's all hope he doesn't experience what I went through. On a typical long run, we bring our card and stop at gas stations for hydration. Kale Pesto
There are so many ways to make pesto. It's a mixture of herbs, garlic, nuts, parmesan, and olive oil. Traditional pesto is made with basil, pine nuts, parmesan cheese, and olive oil. But the unique combinations can be left up to your imagination. Pesto can be spread on warm garlic bread, into a panini, stuffed into meatballs, or mixed into a pasta. I had some kale in the fridge that needed to be put to use, so I decided to blend it up into a pesto. Just so you know, this recipe is a precursor for a recipe coming on Friday. Since it's National Running Day, I want celebrate by sharing the details about my next run race with you! Beach to Beacon 10K in Cape Elizabeth, Maine. Yes! I'm going to Maine! It's only a DREAM vacation for us… so Eric is going too! We actually wanted to go here for our honeymoon! But ended up saving money and staying in Florida. {fast FEASTS} Meyer Lemon and Basil Galletti
I adore the ruffled edges on this pasta. They are called galletti and oh so girly! I found these beauties at Target by Giada De Laurentiis, and of course I had to get them. Love her!Pasta is really easy to throw together on a weeknight. You can go super casual with marinara sauce or dressing it up like I did here.I always keep frozen broccoli on hand for an easy toss in and used cottage cheese for protein and creaminess. We like to have pizza on Friday night. There's something about warm bread and melted cheese at the end of a long week.Last week I made this kale salad. Eric came home and I was chopping up the kale, and of course I received a stare and doubting remarks.
