Saturday I spent time writing at a coffee shop and then met up with family and friends in the afternoon.It's been raining since we woke up, but that hasn't kept us inside. It's been a workin' weekend. Eric is of course studying like a mad man, and listening to classical music, loudly, and I've been running around, writing, laundry, gifting, traveling, church, shopping, among other things. Friday night my bros DJ and Ondrej came over and hung out with me.We hit up a local favorite, Prato on Park Ave, and then walked down to The Wine Room for drinks and good conversation. If you like garlic, cheese, and basil this recipe is for you. It's sweet, garlicky and carries a ton of flavor. Add pesto to pasta, pizza, paninis, eggs, salads, and the list goes on! Eggplant Spelt Ravioli
Spelt, have you heard of it? It's a whole grain that's pretty ancient dating back to more than 8,000 years ago. The rich history of spelt attracted me... it's even talked about in the bible. Since I've been dying to make homemade pasta using this pretty little ravioli stamp, I decided to give spelt a rendezvous in ravioli. Cabot's 75% reduced-fat cheddar made this new-to-me whole grain even tastier. I'm pretty skeptical of reduced-fat cheeses because they usually make a rubbery and flavorless mess. To be honest, I was surprised that even though Cabot's cheese is 3/4 the fat of regular cheddar, it still melts into gooey-oooey-goodness. It's almost like magic in your mouth. Over here, we're all about simple, quick, and nutritious.On the weekends (if I'm lucky), I prep beans. Yeah, it's cheap and really tasty. Simply soak the dried beans over night, then the next day drain the water and cook for 1.5 hours. It's easy for me, I'm usually around the house anyway. During the week we pop them on salads, pastas, or wraps. Smash and smear white beans and avocado on a tortilla, then pile on the lettuce and top with cheese. Roll it up! Easy-peasy. Seriously good. I've had people ask me lately about ideas on how to get more veggies at breakfast. I love making an omelet and stuffing it with spinach, peppers, mushrooms, and cheese. As soon as woke up this morning, I was charged up to run. This wasn't planned, but I rolled with it. I laced up my shoes and was out the door. It was beautiful out, nice and crisp, and I even got to wear long sleeves!! Stephen and Rachel invited us over to their house for breakfast this morning. Stephen cooked up some belgium pumpkin waffles. Rachel made a killer Triple Cinnamon Syrup. I am totally a fan, and do not think I will be purchasing the store bought stuff anymore. Love these plates, she got them from Crate and Barrel. Rachel always has everything just so. I love spending time with these guys. We sipped on hot tea, coffee, and freshly squeezed OJ.
