Slow Cooker Carne Asada Stuffed Sweet Potatoes
You guys, please go make this recipe STAT. I know how much you LOVE your stuffed sweet potatoes so I’m upping the ante with this flavor bomb carne asada beef made in the crockpot and stuffed into a sweet potato.

What is carne asada?
You might be asking yourself what makes this slow cooker beef recipe special and what the heck is carne asada? I wondered the same after enjoying carne asada out at a restaurant, so I asked that Mexican obsessed brother of mine for an authentic carne asada recipe.
Carne asada means “grilled meat”…and I know, I know… we are putting this one in the slow cooker for that extra juicy and effortless dinner time meal, but stay with me– you don’t want to miss out on this flavorful recipe.
Authentic carne asada beef is loaded with a whole bunch of spices like garlic, chili powder, cumin, paprika and lime juice.
We suggest searing the meat in a cast iron skillet or on the sauté mode if you’re using the Instant Pot Slow Cooker/Pressure Cooker, and then marinating the meat in our yummy marinade of honey, lime juice and OJ.
SO SO GOOD!
Then you take all that yummy juicy carne asada beef and stuff it into a cooked sweet potato with your favorite toppings like black beans and avocado (obvi).
How to cook a sweet potato in the microwave?
I recently tried cooking sweet potatoes in the instant pot but TBH, sweet potatoes are THE BEST in the microwave…and they can’t be easier to make.
Literally, sweet potatoes in the microwave are so juicy and tender and don’t dry out like regular potatoes do in the microwave. I LOVE me some microwave sweet potatoes.
To cook sweet potatoes in the microwave here’s what you need to do.
- Wash and scrub your taters and pat try.
- Pierce sweet potatoes with a fork 5-6 times.
- Place sweet potatoes on a microwave-safe plate.
- Cook sweet potatoes in the microwave on high for 5-10 minutes. Most medium sized sweet potatoes take 8 minutes to cook in the microwave. So just check it.
- Once tender, cut your sweet potatoes open horizontally and use a fork to smash the flesh of the sweet potato, the stuff them with all the carne asada beef and fixings.
This “set it and forget it” recipe for slow cooker carne asada stuffed sweet potatoes is just what you need on a busy weeknight.

Ingredients
For Carne Asada Beef
- 1 tablespoon avocado oil
- 2 teaspoons minced garlic
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Pinch of salt and pepper to taste
- 1 pound sirloin tip steak or flank steak
- 1 tablespoon honey
- 1 lime, juiced
- ¼ cup orange juice
For stuffed sweet potatoes:
- 5 medium sized sweet potatoes
- 1 cup cooked black beans
- 2 roma tomatoes, diced
- ¼ cup chopped red onion
- 1 ripe avocado or guacamole, mashed
- ½ cup mexican blend shredded cheese
- ¼ cup chopped fresh cilantro
Instructions
- In a small bowl, combine minced garlic, chili powder, cumin, smoked paprika, salt and freshly ground pepper, and press seasonings into both sides of steak to coat.
- In a large cast iron skillet (or on SAUTE mode in the Instant Pot) heat oil over medium heat; add beef to pan to sear for 2-3 minutes on both sides.
- In slow cooker, add seared beef and pour honey, lime, and orange juice over steak. Place lid on slow cooker, and cook on low heat for 8-10 hours.
- Once meat is cooked through and fork tender, shred meat with forks and incorporate with juices and seasonings in pot.
- Just before serving, pierce sweet potatoes with a fork 5-6 times. Place on a microwave-safe plate and cook for 5-10 minutes.
- Once tender, cut potatoes open horizontally and use a fork to smash the flesh of the sweet potato.
- Stuff sweet potatoes with shredded carne asada beef, black beans, tomatoes, onion, avocado, cheese and cilantro.
Notes
NOTE: If using Instant Pot Pressure Cooker to cook beef, close lid, seal vent and cook on MEAT/STEW mode at high pressure for 45 minutes.
