Healthy Breakfast Muffins = Spinach Muffins
Anyone else on the struggle bus after Spring Break week? I’ve been hitting the ground running after spending several days with the hubs and babes at Disney.
Quality time with the fam is just what the doctor ordered. Although this week has been packed, I felt refreshed and excited to be back in the kitchen creating and testing yummy recipes for you guys!
I absolutely love what I do, and if you’ve followed along for a while you probably noticed a theme… I’m all about bringing you

- lower sugar sweets
- and easy weeknight dinners
Which makes me legit pumped to introduce you guys to the concept of blender muffins.
I’ve teamed up with the Florida Department of Citrus to bring you Healthy Spinach Breakfast Muffins! And wow oh wow are these gluten free muffins so tasty.
Ingredients in this healthy spinach muffins recipe?
Florida Orange Juice
spinach
applesauce
oatmeal
almond flour
and ground flaxseed
And they are made straight in the blender making them an easy meal prep breakfast recipe for toddlers and you too!
If you don’t have Florida Orange Juice in your fridge, go ahead and add it to your grocery list because you need spinach muffins STAT.
Living in Florida definitely has its perks. Not only are we just a short drive away from Disney but we also get to enjoy the beautiful state of Florida and the Florida Orange Juice that comes along with it. I grew up with orange trees in my backyard! Our neighborhood was literally surrounded by orange groves.

We are always adding Florida Orange Juice to our smoothies and quick breads like these spinach muffins because it adds a tangy and sweet flavor to recipes that you don’t even need added sugar!
You can also make these muffins without the chocolate, and they are still sweet and tasty, thanks to Florida Orange Juice! But, let’s be honest, the chocolate chips are basically an essential ingredient in any breakfast muffin recipe. IMO.
For more breakfast power, pair these muffins with a cold glass of Florida OJ. That’s 4-6 ounces for kiddos and 8 ounces for adults.
How to get your kids to eat more fruits and veggies?
My strategy, add them to breakfast muffins and top with chocolate chips, of course!
Although we’re working on our 3.5 year old to not just pick the chocolate out. #reallife
This recipe is made with a full cup of Florida Orange Juice and 2 cups of packed spinach!! Which makes a dynamic duo because the vitamin C in 100% orange juice helps the body absorb the iron in spinach!!
If you’re wondering whether or not you’ll be able to get your kiddos to gobble these healthy muffins up because of the spinach, I’ve got good news! Other than the green color of these gluten free muffins, there’s zero evidence that there is spinach in these muffins, you can’t taste it.
My kids actually like the green color! Big brother referred to these as dinosaur muffins, I thought that was too cute. Spinach muffins can also be named hulk muffins or green monster muffins or wicked witch muffins…whatever your kiddo would like.
My son is also very into trains so he told me these muffins are “green like Percy”. Bless him. May I never forget this sweet train phase.
And if you have a hard time getting your littles to eat their veggies, this spinach muffin recipe will be your saving grace!
Oh this blender muffin recipe is also great for getting kids in the kitchen.
It’s so easy for them to help make! Lay out all the ingredients and have your kids help with adding them to the blender.
As my picky eating toddler added the spinach to the blender we had a moment… he said, “oh I need to eat my lettuce– took a bite and then added the other half to the blender”.
I was literally dying inside laughing. But it’s little exposures like that that help kids learn to love their fruits and veggies.
He also told me he needed his orange juice after adding Florida Orange Juice to the blender. Again, things kids say.
And in case you’re wondering, what is the best way to store spinach blender muffins?
To store these muffins, place them in a plastic bag or glass storage container at room temperature for up to 3 days. You can also store in fridge for about a week (if they last that long in your house!)
If you double or triple the recipe for meal prep (which I HIGHLY recommend) freeze dem spinach muffins.
How to freeze muffins?
Remove muffins from liner and place in freezer safe bags or an airtight storage container. Muffins should keep for up to 3 months. Breakfast meal prep for the win!
How to reheat frozen muffins?
It’s so easy– pop the frozen muffin on a paper towel and place in the microwave on high for 30 seconds.

Description

Ingredients
- 1 cup Florida Orange Juice
- 2 cups packed spinach
- 1/2 cup unsweetened applesauce
- 1/4 cup avocado oil
- 1 tablespoon vanilla extract
- 1 1/4 cup raw old-fashioned oats
- 1 cup almond flour
- 1/4 cup ground flaxseed
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 400 degrees F. Line 12- count muffin pan with high quality muffin liners. We used jumbo foil muffin liners for best results.
- In a blender, add Florida Orange Juice, spinach, apple sauce, oil and vanilla and blend until spinach is fully pureed.
- Add oats, almond flour, flaxseed, baking powder, baking soda, and salt to mixture in blender and pulse until fully mixed, scraping down sides of blender as needed.
- Add eggs and pulse quickly, just until incorporated; taking care not to over-mix.
- Stir in chocolate chips and pour muffin batter evenly into 12 muffin cups. Top with additional chocolate chips if desired; bake in oven for 25 minutes.
- Once removed from oven, allow muffins to rest in pan for 5 minutes before transferring to wire drying rack to fully cool before enjoying.
Notes
- Use high quality jumbo foil liners for best results.
- Please allow for muffins to cool completely before removing liners to prevent sticking.
- Grain free muffins need to be fully cooled before enjoying for best texture.
- If you need to speed up cooling process place in freezer. 😜

Hey! I did test these egg free, however they didn’t rise as high and sunk a little in the middle. Curious if this is an issue you have with egg-free baking? Or is there a remedy for it?
They still tasted good though– may need to cook them a little longer? LMK if you give it a try.
