Spinach Quiche
I have been wanting to make a quiche for a while now, and yesterday I found this really cute quiche pan so walah… here it is! I love quiche because it spices up the morning routine, it delivers a nice change. This recipe is delicious and has a lot of nutritional value–it’s loaded with antioxidants and high quality protein. You can add extra veg if you’d like, this is what I had in the refrigerator.
spinach, 1 package defrosted and squeezed
2 T fresh salsa
1/4 cup chopped onions
1/4 cup shredded carrots
1/4 cup plain yogurt
1/2 cup colby jack cheese
4 eggs
freshly ground pepper
Preheat oven to 325, and coat a quiche pan with cooking spray. Mix all ingredients together and pour into prepared quiche pan. Bake for 35 minutes.
