It’s FriYAY! I’m all about the weekend because that means we get to be together as one big happy family. While I’m absolutely LOVING staying at home with my baby most days of the week, my {first} baby aka the hubs doesn’t get to spend as much time with us because he works a bunch. So it’s nice on the weekend when we get to kick back and relax errr… have fun. No such thing as relaxing any more with our little squirm bucket.
I seriously can’t believe that he’s nearly 6 months old!!!! We started a little bit of solid food play– i.e., I’ve given him a carrot stick to teeth on, and have mushed up avocado, banana, and butternut squash for him. He’s not 100% interested in his OWN food– but is constantly reaching for ours, especially straws. Starbucks straws to be exact. Baby after my own heart.
Also, I must report. While we are likely no where near sleeping through the night Parker surprised us all last night. He slept IN HIS OWN CRIB for nearly 5 hours! And then for another 4 hours after I nursed him at 4:30 this morning. That may not sound like a lot to you, but I seriously haven’t slept more than a 3ish hour span since last October. Cray cray, I know.
Granted even though baby slept, mama didn’t because my body woke me up every 3.5 hours wondering what was going on, if he was breathing, and why he was sleeping so much. So of course I was up checking on him. We’ll get there one day.
I thought I’d be all into the CIO (cry it out) method, but my mama heart just can’t take the desperate cries, especially at night. So I’m looking at the “is he sleeping through the night yet” conundrum as a developmental milestone that we will {lord willing} get to one day. I’m not trying to force it on him before he’s ready, but continuing to support a healthy sleep environment and adjusting as we go.
But for now, we have ice cream. Not just any ice cream but VEGAN and DAIRY FREE coconut cream ice cream. OMG>>>>> I can eat all the strawberries right now and because they are so sweet, I didn’t have to use much added sugar.

Description
This Strawberry Coconut Ice Cream is so decadent and lusciously creamy! Grab a bowl of this vegan ice cream made with less refined sugar thanks to the sweetness of fresh strawberries and bananas.
Ingredients
- 1 pint {16 ounces} fresh strawberries, hulled
- 2 over-rippened bananas
- 1 can coconut cream (i use Trader Joes… this is different from coconut milk, it’s 100% cream)
- 1/2 cup fine grain coconut sugar (or regular granulated sugar if you wish)
- 1 vanilla bean
- 1 teaspoon vanilla extract
Instructions
- Place strawberries, bananas, coconut cream, and sugar in a blender. Scrape seeds out of vanilla bean, and add to blender along with vanilla extract.
- Process until smooth.
- Pour ice cream mixture into ice cream maker and churn until soft serve consistency forms.
- Enjoy as soft serve or transfer to storage container to continue freezing.
- Just before serving, allow to sit at room temperature for 5-10 minutes to soften.

I am trying to rid myself of unneeded carbs and sugar. It has been a month now and my blood sugar counts have come down dramatically. My worst enemy is ice cream. I drive over the road for a living and unfortunately eating healthy is difficult, but NOT impossible. I have been eating LOTS of salads- I don’t use dressings, LOTS of veggies and a high increase in almonds. I do a very limited amount of exercising. My worst enemy has ALWAYS BEEN ice cream. I have had NONE now in the almost 6 weeks since I was last home, with almost 6 weeks to go. My wife has been a HUGE help in support and standing by me. I am hoping that SOMEHOW I can find recipes for LOTS of ice cream flavors that we can have at home.
