This Strawberry Coconut Ice Cream is so decadent and lusciously creamy! Grab a bowl of this vegan ice cream made with less refined sugar thanks to the sweetness of fresh strawberries and bananas.

Ingredients
- 1 pint {16 ounces} fresh strawberries, hulled
- 2 over-rippened bananas
- 1 can coconut cream (i use Trader Joes… this is different from coconut milk, it’s 100% cream)
- 1/2 cup fine grain coconut sugar (or regular granulated sugar if you wish)
- 1 vanilla bean
- 1 teaspoon vanilla extract
Instructions
- Place strawberries, bananas, coconut cream, and sugar in a blender. Scrape seeds out of vanilla bean, and add to blender along with vanilla extract.
- Process until smooth.
- Pour ice cream mixture into ice cream maker and churn until soft serve consistency forms.
- Enjoy as soft serve or transfer to storage container to continue freezing.
- Just before serving, allow to sit at room temperature for 5-10 minutes to soften.
