Don’t doubt me on this one, stuffed dates are simply amazing. Trust me, I’ve been a date doubter, but after these mascarpone stuffed medjool dates, I’m no longer turning up my nose.

- In small bowl, stir together mascarpone cheese, vanilla, and ground cinnamon.
- Remove pits from dates and fill each with a spoonful of cheese mixture and chopped pecans

I've heard of ppl doing peanut butter in dates, but I'm not sure why, it just isn't as appealing to me. I'd probably be more willing to try the almond butter combo.
