Tuna Stuffed Avocado
This is one POWER packed tuna salad recipe made with tuna, avocado, pecans and tart cherries – YUM! And it’s a low carb lunch recipe for those of you who might be into that sorta thing.
I’m obsessed and the obsession runs deep. Kinda like my love for coffee and coffee flavored things. This has been my go-to Tart Cherry Tuna Salad combination for Y.E.A.R.S.
I don’t know why I haven’t shared it with you yet (I’ve been keeping it all to myself…..muhhhaaahahaha), but it’s like my gotta-have-it-everyday type of lunch. And it’s been taken up a notch with this recipe!
No but seriously, I do get in routines with this salad and will eat it a couple times a week.
In my past life, I’ve made this Tart Cherry Tuna Salad with mayo, but it’s 2016 peeps and it’s time to be all HEALTHY, so avocado it is.
And now I’m crying because where has this recipe been my whole life?!
It’s okay, I’m on the mend, and I’m never turning back, never turning back. I’ll eat avocado for days.

Also I’ve been known to sneak a couple extra tart cherries from the bag to toss at the bottom of this salad because I HAVE TO HAVE tart cherries in every mouthful, especially the last bite. There must be a tart cherry in the last bite.
It’s like a rule now thanks to this recipe. This salad only takes a couple seconds to toss it all together, and it’s super filling, which is likely why it ranks so high up on my lunch list.

This looks delicious! Does it keep well or does the avocado brown? Do you just make this right before eating?

I make it right before eating! If you want to meal prep it, I’d suggest squeezing a little lemon or you could mix in a small amount of mayo because that tends to keep it from browning. Another idea is to mix everything else and then stir in the avocado right before eating.
