Hi friends! I’m at the CPSDA conference (Collegiate & Professional Sports Dietitians Association) in Scottsdale, AZ this week. Remember last year the conference was during our 3rd year wedding anniversary?! I flew into Phoenix yesterday morning and the conference kick off party was last night.
When I arrived to town yesterday I was starving and really thrown off by the time change. It was 8:30am Arizona time and that 5 hour flight was draining… got lots of great reading in though! So far I’ve really enjoyed this area, and yesterday I had my first Trader Joe’s experience! Can’t wait until the Orlando location opens up!
So I’ve been wanting to share a few things with you that I’ve been really loving lately….
Turquoise and Caicos by Essie. I’ve never been much of a polish person. I’m all about getting a pedicure every few months, but here lately I’ve been making a few polish purchases to paint my nails at home. I can’t get enough of this color on nails and toes!
Mexican Chicken and Quinoa Casserole. {Photo and Recipe by MJ and The Hungryman}. I met Min at FNCE last year, and not only is she sweet and humble she is a true inspiration to me. She’s currently studying to be an RD and has some serious photography skills! I pinned this recipe a few weeks ago and I’d been dying to make it ever since. I prepped it last week and Eric has been eating it for days! Thanks Min!! I didn’t have all the vegetables on hand that she calls for in her recipe, but I love how she makes it really easy to adapt to what you have in your pantry and fridge! You’ve got to make this!
To Be Told by Dan Allender. This book has been a really fascinating read. It’s helping me to discover and be comfortable with the story that I’ve been called to live. If you’re looking for some direction or want to find deeper meaning in your life, this is a great book with lots of “next steps” and tips weaved in!
CrossFit. We started CrossFit at the beginning of training for our marathon which is this weekend!! AHH! And it has given me a new perspective on fitness. The reason we started CrossFit is we needed a consistent strength routine and wanted more balance. I’m beginning to have new priorities with my fitness, and starting to focus on the things that really matter and give back.
Pearl eating tuna. This little chick knows the sound of the can opener. When she hears it cranking she starts crying! I’ll pack tuna for lunch about once a week and Pearl loves to get in on the action. I only give her a little bit and she instantly starts purring. It’s so sweet. Special moments. Downside: she smells like tuna for days.
This Before & After Video. I love how she is embracing her body and cultivating a movement around it! We definitely need more of these types of messages in our culture. Have y’all seen this?? It’s so empowering!

Thank you so much for the shout out and for your kind words, Kristina! I’m so glad Eric liked the dish! I hope we’ll get to meet again in the near future ;). I absolutely adore that color as well. I used to paint my nails all the time..now my nails are all nasty from the constant biting (can’t believe this terrible habit has returned..Tim told me he could tell how I’m doing by the way my nails look..I guess I’m not doing too well at this moment).
