Description
This Turkey Taco Soup is easy peasy to make for a weeknight dinner… a healthy meal the whole family will enjoy. Toss all ingredients into a pot and simmer until you’re ready to eat! The toppings are the best part!!
Ingredients
- 1 teaspoon olive or avocado oil
- 1 red onion, diced
- 1 tablespoon minced garlic
- 1/2 bell pepper, diced
- 1 pound lean ground turkey
- 1 packet taco seasoning
- 28 ounces canned petite diced tomatoes
- 1 can black beans
- 1 can corn
- 4.5 ounces canned green chilies
- sour cream, green onions, tortilla chips (optional toppings)
Instructions
- In large pot, heat oil over medium high eat and add onions and garlic until softened.
- Stir in bell pepper and continue to cook to soften.
- Add ground turkey and cook until browned.
- Stir in taco seasoning to incorporate into meat and add tomatoes, beans, corn, and chilies and bring to a boil. Reduce heat to simmer until ready to eat.
- Ladle soup into bowls and top with sour cream, green onions and tortilla chips if desired.

What is the calorie count in this soup? The blog posted on Firtness Pal said 297 calories for about 2 cups… but when entered into fitness pal calorie counter it says 1 cup at 297…. can you please clarify? Thank you!

Hey Katie– I’m not sure exactly how many cups this recipe makes… however there are 6 servings! And for each serving, you are right– it’s 297 calories. Hope this helps!

I typically rinse and drain beans but in this one, I just tossed it all in… it adds liquid to the soup 🙂
