Lucky Cowboy Caviar is an old family favorite classic 3 bean dip filled with black eyed peas, pinto beans, black beans.
When throwing a party I like to serve this Lucky Cowboy Caviar because it’s a healthier snacking option and filled with fiber and protein keeping us fuller for longer.
Beans and peas are also a rich source of potassium, folate, and iron– and we all need more of those nutrients.
We often serve this on New Years Eve to wish our guests a lucky year ahead. As southern tradition would have it, eating black eyed peas on New Years Day is thought to bring good luck, health and prosperity!
Enjoy this Lucky Cowboy Caviar with corn chips or as a salad OR grilled protein topper.

Description
Lucky Cowboy Caviar is an old family favorite classic 3 bean dip filled with black eyed peas, pinto beans, black beans.
Ingredients
- 1 green bell pepper, diced
- 1 medium red onion, diced
- 2 celery stalks, diced
- 2 jalapenos, diced
- 1/4 cup cilantro, chopped
- 1/4 cup olive or canola oil
- 1/4 cup apple cider vinegar
- juice of 1 lime
- 1 (14oz) can pinto beans, rinsed and drained
- 1 (14 oz) can corn, rinsed and drained
- 1 (14 oz) can black beans, rinsed and drained
- 1 (14 oz) black eyed peas, rinsed and drained
- drizzle of honey to taste, optional
- salt and freshly ground pepper to taste
Instructions
- In large bowl, mix all ingredients together; tossing to coat. Serve with corn chips or on top of a green salad.
